Method

Ingredients 4 people
2 large onions
1 orange
50 g pine nuts
50 g raisins
2 apples
100 g honey
500 g Cod
Flour
Olive oil
|
Fry the onion and orange peel, cut julienne style, for about 10 minutes.
Add the raisins, pine-nuts and the juice of the orange and leave to simmer for 15 minutes. Introduce the honey at the last moment.
Lightly coat the cod with flour and fry in heated olive oil.
Transfer to an oven proof dish and cover with the onion and other ingredients.
Bake at 180 º for 5 minutes.
While the cod is baking slice the apples and brown in the pan.
Serve the cod on top of the apple and enjoy!
